New Executive Chef at BDT Stage Doug Groendyke
Boulder's Dinner Theatre changed it's name to BDT Stage this season, and now they have made another change, this time in the kitchen. The new production of Peter and the Starcatcher is also the first menu for their new executive chef Doug Groendyke.
Born and raised in Florida, honing his skills in restaurants and high end catering operations spanning the state from Boca Raton, to Gainesville and St. Augustine, Doug has most recently been spending time exploring the farm to table movement in Burlington, VT. Doug has worked at critically acclaimed establishments The Inn at Essex and The Daily Planet, both in Burlington.
The biggest challenge is just taking all my experience and passion for food that I have working a la carte, farm to table, and fine dining restaurants, and trying to transform that to this environment. And choosing the right kind of menu items that are still gonna blow customers away but we’re able to execute in the 20 minute rampage of 250 diners.
- Roasted Chicken – Stuffed with caramelized apples and brie topped with a mushroom jus over Yukon mash with fresh daily vegetable.
- Green Chili Pork – Fire-braised pork shoulder with a spicy green Chile salsa over basmati rice pilaf with fresh daily vegetable.
- Maple Panko Crusted Cod – With a creamy artichoke and crab sauce over Yukon mash and fresh daily vegetable.
